This is a great starter book. We have been able to make some sauces that are to die for using this book as a base. Start using the recipes just as listed in the book and make small batches. This will give you an idea if you like it as is or if you need to make a few tweaks for your taste buds. I would of had no idea where to start making a hot sauce. After experimenting with these recipes we now have some great hot sauces we love more than any store bought ones we have tried. Franks hot sauce hot wings use to be our favorite but now we have a hot sauce that is even better after this book. You want to perfect your own hot sauce I recommend starting here.

Enjoyed the book and the stories. Lots of recipes. It gave me enough to get started and experiment. I was hoping for more in the way of how to make actual sauces. More of what goes with this or that. How much vinegar and if needed, how much of another liquid. Should you use a tomato base, if so...what...canned sauce? Crushed tomato? Paste? I document each formula of sauces I make. My first couple had flavor, but almost no heat. More guidance in the ingredients would be helpful. Good book to have if your into hot sauce making.

This book has very little technique in it, actually. There's a history of hot sauce, a description of types of hot sauce, descriptions of various ingredients... And then about 2/3 of the book is just recipes. I'm disappointed.

This book was ok, I learned a little from it. I was hoping to learn more about making fermented hot sauces. Also many of the peppers are not carried here in central California. Some of the recipes are very good, some not so good. If you buy this book the Back Draft recipe is my favorite and it can be jarred very easily.

Nothing but recipes no knowledge to go with it when developing your own recipe.

I am a pepper-head! This is all I needed to learn about the separate varieties and how to prepare. Every major food chain supermarket should give this to their produce manager, mine was delighted by the HEAT- chart which I copied for her.

Bought to go with my purchase of hot sauce bottles etc. to make a make your own hot sauce kit. It was a hit and so much cheaper than purchasing everything prepackaged.

Our only wish was for more writing and fewer recipes. All the info about classification and choosing your pepperx, as well as processing them is so juicy, we wanted more.
